I've been asked about my process a lot lately, so I want to post it here for everyone! My Cake Baking / Freezing / Filling / Frosting Process 1. Bake the cake layers, wrap them in plastic wrap and place in freezer (not the refrigerator) overnight. How I bake cakes: https://youtu.be/6fEvJD8KPNM 2. Remove the wrapped layers from the freezer and leave on the countertop (still wrapped) to completely thaw, about 2-3 hours for smaller cakes and up to 4-5 hours for larger cakes. How I freeze and thaw cakes: https://youtu.be/w0ztL3YMIOs 3. Remove the plastic wrap and torte / fill the cakes. How I fill cakes: https://youtu.be/wN6yguNwtOM 4. Wrap the filled cake in plastic wrap and let them settle overnight at room temperature, not in the refrigerator or freezer. If you don't have enough time for them to settle, or if you have a perishable filling, do the technique I show in this video to speed up the settling process: https://youtube.com/shorts/2Dg2DxNa1VE 5. Remove the plastic wrap, crumb coat the cake and place the cake in the refrigerator for about 4 hours so the icing can solidify. Do not re-wrap in plastic. 6.
