Battle of Tolbiac, which took place in Gaul during/after the collapse of the last fragments of the Western Roman Empire. Despite being fought in AD 496 (or 506, depending on who you ask) it marked the beginning of what would one day become modern France.

I'm very happy to share with you the Battle of Ankara, the titanic clash between two of the best commanders of their time, Bayezid I and Timur the Lame. The battle was catastrophic for the Ottoman state, fracturing what remained and bringing almost total collapse of the empire. This resulted in a civil war among Bayezid's sons. The Ottoman civil war continued for another 11 years (1413) following the Battle of Ankara.

One could argue that while the Roman defeat at the battle of Yarmouk was a mortal blow to the empire, the fall of Roman Egypt was the final nail in the coffin. Beyond the year 645 AD, the Eastern Roman Empire steadily declined from a Mediterranean power to a regional power, while the seemingly unstoppable Rashidun Caliphate rose to the status of empire.

At the time of the Islamic conquest, Coptic Christianity was the dominant religion in Egypt. General Amr ibn Al-As of the Rashidun Caliphate is credited for bringing Islam to Egypt and Africa in 640 AD. He is celebrated as one of the most important historical figures in the history of Egypt.

Islamization of Egypt and the Middle East was a gradual process that started in the mid-7th century. Conversion from Christianity to Islam was accompanied by the jizya tax for non-Muslim subjects who refused to convert. Islam became the dominant religion across the Levant and Egypt by the 10th to 12th centuries, and the Arabic language replaced Coptic as the informal language of the people and Greek as the official language.
