Kofte Aande (Meatball & Egg Curry) Recipe ------------------------------------------------------------ Kofte Ingredients: 1 lb lamb mince (keema) 2 slices of white bread, (crust removed) soaked in water and excess water squeezed out 1 teaspoon chilli powder 1 teaspoon salt 1 teaspoon of coriander powder 1 teaspoon garam masala Method Mix all ingredients well and start making the kofte (apply a little water to the palms to prevent sticking) ------------------------------------------------------------ Masala Curry Ingredients: ¼ cup of oil 2 medium onions sliced 1 teaspoon ginger paste 1 teaspoon garlic paste 1 teaspoon salt 1 teaspoon chilli powder 1 teaspoon turmeric 1 cup of chopped tinned tomatoes Approx. 350ml of water 1 teaspoon garam masala 6 boiled eggs (sliced to garnish the curry) Fresh coriander to garnish Fry the onions until golden brown. Add the ginger, garlic paste, salt, chilli powder, turmeric and stir. Add the tinned tomatoes and 200ml water, stir and let it simmer on low flame for about 10-15 min until the onions have softened and the oil has separated Add quarter cup of water and gently drop in the kofte one by one, put the lid on and cook for 8 mins. Remove lid and gently shake the pan to ensure the kofte do not stick at the bottom of the pan - do not stir the kofte as they will break. Place lid on and cook for a further 5 mins then remove lid and you can now stir the kofte as they have taken their shape – cook until gravy reduces (stirring occasionally). Add garam masala. Stir well and add half cup of water and allow to simmer for a further 8 mins.
