Scroll down to view the ingredient list and instructions. مواد لازم دو کیلو ماست چرب توجه: ماست باید بدون مواد و افزودنی های نگهدارنده باشد( یعنی ماست طبیعی) در غیر این صورت ترش نخواهد شد دو عدد کیسه نخی استرلیزه برای آب گیری ماست صافی متوسط برای ابگیری ۲/۴ قاشق چایی خوری نمک ۳/۴ فنجان آب ۸ لیوان آب Ingredients: -Two 32 ounce full-fat yogurts -*Note: Yogurt must be preservative and additive free or else it will not sour -2 Cheesecloths or nutmilk bag -Strainer -¾ teaspoon salt -¾ cup water -64 ounces water -ماست را در دمای اتاق برای یک تا دو روز قرار دهید تا ترش شود -توجه: مراقب باشید که روی ماست را با درپوشی نخی بپوشانید که بخارات آن خارج شود ماست ترش را در قابلمه ریخته و با ۴ لیوان یا ۶۴ اونس آب مخلوط کرده و روی گاز بگذارید ، آنقدر هم بزنید تا شروع به جوش آمدن کند توجه: هم زدن در این مرحله بسیار اساسی و مهم است ، در غیر این صورت ممکن است ماست ببرد وقتی مایع جوش آمد ، حرارت را روی متوسط رو به پایین تنظیم کنید و در این مرحله هم زدن دیگر لازم نیست بگذارید مایع برای ۲ ساعت و نیم بجوشد، در نیم ساعت آخر باید مرتب انرا هم بزنید تا ته نگیرد پس از دو و نیم ساعت شعله را خاموش کرده و بگذارید سرد شود، سپس مایع را از صافی رد کنید و داخل یک کیسه نخی بریزید و انرا تحت فشار قرار دهید تا آب آن بیرون بیاید برای آنکه بهتر آب آن گرفته شود می‌توانید چیز سنگینی روی کیسه بگذارید در این مرحله می‌توانید از کشک استفاده کنید، کافی است به میزان دلخواه به آن نمک بیافزایید می‌توانید نیم ساعت بگذارید در کیسه بماند(بصورت آویزان یا تحت فشار) تا آب بیشتری از دست بدهد و بعد انرا بصورت گلوله های کوچک دربیاورید و بگذارید قبل از یخ زدن خشک شوند توجه: در این حالت پس از خشک شدن گلوله ها کوچک تر می‌شوند می‌توانید ۳ ماه کشک را در فریزر نگهداری کنید. در هنگام استفاده کافی است کمی آب گرم به آن اضافه کرده و روی شعله کم هم بزنید تا آماده استفاده شود. اگر احتمالا نمک آن زیاد بود نگران نباشید، می‌توانید به "اش"یا "کشک بادمجان" یا هر غذای دیگری که نیاز به کشک دارد نمک نزنید Instructions: -Leave yogurt out at room temperature/warm environment for 1-2 days until it sours -*Note: make sure yogurt is covered but not sealed completely to allow gases to escape -Add sour yogurt to pot -Add 8 cups water and beat until mixed -Turn stove to medium heat -Continuously stir until begins to boil -*Note: it is crucial to not skip this step or yogurt will curdle and not have proper consistency -Once begins to boil turn heat down to low/medium (you can stop stirring at this point) -Boil for 2.5 hours -In the last half hour, you must frequently stir so curds at the bottom don’t burn -After 2.5 hours remove from heat and allow to cool -Place strainer over pot and place cheesecloth over strainer and strain -To help strain you can place something heavy on it or squeeze with hands -You can use the kashk right away at this point if you desire -Simply add salt and use it as is or blend it to make it less grainy -However, if you would like to store it for future use allow it to strain for half an hour -After half an hour, empty strained kashk on to plate and roll it into tiny balls -Allow the balls to dry before freezing. -*Note: they will shrink when they dry -You can freeze them for 3 months -When you are ready to use the frozen kashk you can blend them with water and salt -You can also blend the strained kashk and store in the fridge for 2 weeks -Add salt and water until desired taste and consistency is achieved -*Note: Don’t worry if it becomes too salty, simply add less salt to any dish you make
