This has been a staple recipe for our family for a very long time and continues to be a favorite to this day. The original recipe was written and shared by the Hillbilly Housewife on her blog, I have only made minor tweeks over the years to fit our family's taste so I want to make sure to give her credit. This meal also reheats well and also freezes well, so you can make it up ahead of time and heat as needed.
You can cook this on the stove top, in the crock pot or in an InstantPot. We have done all of the above and use whatever method fits our needs that day the most.
Ingredients:
1.5 cups rinsed lentils
1.5 cups rice (we use brown)
8 cups liquid (we prefer beef stock or boullion, water also works)
Taco seasoning or spices (quantities are in the video as I don't have the recipe in front of me as I type this)
