Ingredients:
400g rice
800ml water
2 tsp salt
Juice of one lemon
2 tbsp olive oil
1 bell pepper
2 spring onions
15 cherry tomatoes
200g peas
100g olives
240g canned tuna fillets
Fresh parsley
1 tbsp salt
2 tbsp basil
1 tsp pepper
50ml mirin (Japanese rice wine)
Preparation:
Wash the rice and cook it with water and 2 tsp salt.
Let the rice cool down and mix it with lemon juice and olive oil.
Dice or chop the bell pepper, spring onions, cherry tomatoes, peas, olives, tuna fillets, and parsley.
Add all the ingredients to the rice and season with salt, basil, pepper, and mirin.
Mix the rice salad well and let it sit in the refrigerator for at least 30 minutes before serving.
