Ingredients:
1/4 cup Lentils
1/4 teaspoon salt
1/4 cup Couscous
2 teaspoons Oil
1/2 cup Red onions, minced
1/8 cup Celery, minced
1/8 cup Leeks, minced
2 teaspoons Garlic, minced
1 cup Cremini mushrooms, chopped
1/8 cup Vegan mayo
1/2 cup Bread crumbs
1/4 teaspoon Black pepper
4 Multigrain Burger Buns
Recipe
1. Simmer the lentils until soft, about 20 minutes. Drain and let cool.
2. Add 1 cups of boiling water to the couscous, cover with plastic wrap and let stand 20 minutes.
3. Heat the oil in a pan add the mushrooms, onions, celery, leeks and garlic and cook until tender about 10-12 minutes or until all liquid has evaporated. Let cool.
4. Add the couscous to a bowl, break apart any large chunks. Add the lentils, cooled mushroom mixture, bread crumbs, pepper and mayo. Mix until blended.
5. Scoop out 4oz servings and shape into a patty.
6. Wrap up and use or freeze for later service.
7.You can cook on a flat top, grill or roast in the oven. Cook until internal temp is over 140 degrees. It can be served on a bun, on top of a salad or by itself.
