Org Mode allows to set priorities for tasks headlines. By default the priority marker goes from A (the highest priority), through B (the medium priority) to C (the lowest priority). In Org Mode, the priority marker is called the priority cookie. Priorities can be attached to any headline, this doesn't have to be a task.
A task/todo headline without the priority is equal to a headline with the B priority. Priorities are useful only in the agenda context. The highest priority tasks are displayed first either in the agenda view or in the agenda tasks.
You can change the priority cookie color using the `org-priority-faces` variable. It is a list of priorities from the highest to the lowest with the ASCII code and corresponding color. There is also an external package called `org-fancy-priorites` which allows to change the look of the priority cookie.
Org Mode is considered to be the Emacs killer application. It is a personal knowledge management and outlining tools for Emacs. Org Mode documents are textual files. There is no proprietary format. Those files can be easily checked into a Git repository so that you can follow how they evolve over time.
