This is a great Vegan meal. It was so yummy! It was a little bit to spicy for the kids. They stirred in a little ranch dressing from their salad and it added great flavor and calmed the spiciness for them
1 Tbs olive oil
1 medium yellow onion, chopped
2 large carrots, cut into 1/4 slices
2 garlic cloves, minced
1 large sweet potato, peeled and cut into 1/4 inch dice
1/4 tsp crushed red pepper
3 cups cooked or 2 (15.5 ounces) cans dark red kidney beans rinsed and drained
1 (14.5 ounce) can diced tomatoes, drained
1 tsp hot or mild curry powder
1 tsp dried thyme
1/4 tsp ground allspice
1/2 tsp salt
1/4 tsp freshly ground black pepper
1/2 cup water
1 (13.5 ounce) can unsweetened coconut milk
