It might sound weird to put cucumber in potato salad but this Japanese inspired version is really good!
It yummy as it is but you can put it in a roll or any other bread and make a sandwich as well!
* Ingredients
- Potato 2ea
- Mini Cucumber 1ea
- Onion medium 1/2ea
- Carrot shredded 1 small handful
- Scallion 1ea
- Bacon 2ea
- Homemade Japanese Mayo 75g
- Salt t.t
- Pepper t.t
* Method
1. Peel and cut potatoes. Then cover them with cold water, add a little salt, and boil until they are fork tender.
2. Cut cucumber into thin rounds then add a bit of salt and mix.
3. Thinly slice onion, scallion, and chop bacon.
4. Cook bacon until nice and crispy. Then add onion and carrot and cook until it's softened.
5. Drain the potatoes, put them in a large bowl, and mash them a little. Like a really chunky mashed potato. Allow to cool for 5 minutes.
6. Add mayo to the potato and mix well.
7. Add everything else, making sure to squeeze the water out of the cucumbers before adding them.
8. Add some salt and pepper and give it a good mix.
9. Plate them and garnish with scallion and enjoy!
