Carrot Ginger Dressing
Ingredients
· ½ lb. carrots, cut into chunks
· 1/4 cup ginger · 1/4 cup shallots
· 1/4 cup rice wine vinegar · 1 tbsp. sesame oil
· 1 tbsp. honey · 1/4 tsp kosher salt · ½ cup avocado oil

1. Pulse carrots in food processor until almost pureed
2. Add ginger, shallots, rice wine vinegar, honey, sesame oil, and pulse until smooth.
3. In steady stream add avocado oil.
4. Adjust seasoning and add water if necessary.
5. Store refrigerated for 7-10 days until needed.
Lime Cumin Dressing
Ingredients
· 3 tbsp. lime juice.
· 1 tbsp. lime zest.
· 1 tbsp. sherry vinegar.
· 1 tbsp. cilantro, fresh chopped.
· 1 tsp garlic. · 1 tsp cumin seeds.
· 1 tsp mustard.
· 1/4 cup avocado oil.
Directions (yields 12 oz., 0.5 oz. servings)
1. For cumin seeds, toast in a sauté pan over medium heat until fragrant, for 5 minutes. Afterwards, place into a coffee grinder and grind until fine.
2. Place lime juice, lime zest, sherry vinegar, garlic, cumin, and mustard in a mixing bowl and whisk until smooth.
3. Adjust seasoning.
4. Store refrigerated for 7-10 days until needed.
